Breadfruit, Avocado and Cod Fish Salad


  • 1 lb salted cod
  • ¼ cup onion dice
  • 3 potatoes wedges
  • ½ ripe breadfruit dice
  • 3 eggs hardboiled slices
  • 1 avocado dice
  • ½ cup Olive oil (virgin)
  • salt & pepper to taste


Soak the salted Cod over 4 hours change water twice to remove some of salt. Place Cod in medium pan and boil for 5 minutes, separate and allow to cool, boil eggs and peel. Peel potatoes and breadfruit (optional) cut into wedges and boiling until tender. Allow to cool. Place potatoes wedges, breadfruit wedges, onions dice, avocado, cubes, break up Cod fish into chunks, and add over vegetables and add hard boil egg slices. Lightly season with salt and pepper and add olive oil over all the ingredients.

Serves 6.
